Brewer's Notes

Ausdb's Christmas case brew,
Brewed 9/12/06
Bottled 16/12/06 (case swap day!!)
Label made 15/12/06 applied BEFORE arrival at GL's and NOT last to arrive (this year)
0 minute hop additions via the 'last minute™' Hopback
NOTE JAGGERY PALM SUGAR USED NOT BROWN SUGAR (Jaggery not in database)
Buy it from an Asian supermarket, the small round blocks in a bag about 60mm in diameter. It should taste sweet with a 'caramelly creamy' flavour.
Mashed at 67-68°C
Fermentation temp regime
20°C for days 1-2
22°C for days 3-4
25°C day 5
Crash cool to 2°C days 6-7 then bottled
Priming rate 3.5gm of sugar per Coopers PET bottle for about 2vols of CO²
Drink after 1 weeks conditioning

Frogs Bladders optional :-)
