Brewer's Notes

20 minute protien rest at 50degC, top up with boiling water for a 1hr rest at 67degC. Sparge boil chill and ferment at 12degC.

I've now had 2 attempts at this beer. The first was very similar to your Db recipe but I added 1.5% melanoidin malt. My IBU's were slightly down. I found almost no aroma (even with late hops additions) but plenty of awesome flavour. Little hazy when poured but who cares. My efficiency was 70% but I am getting better with being more patient on my fly sparging. The second attempt I added 6.5% wheat malt and up'd the IBU's to 38'ish and did a 60/40/20 hops addition with no late hopping (as suggested from other threads). I like the first attempt much better and I will focus on that one to tweak in future I think.
