Went 4kg b&b pale & .75kg wheat and Amarillo.
At 18deg 1056 is a beast. Pitched at 3pm yesterday with stc at 18 This morning had filled my 2lt blow off bottle! !.
think I'll turn it down to 16?

Leave the temp at 18c, in a couple of days increase to 19 and go up 1c every 24hrs finishing at 22. Holding temperature consistent at 18c for the first 72hrs is where a majority of the flavour compounds are formed.

After ferment drop temp to 17c for 2 days then dry hop the beer.
