I write down my recipes when developing them (and store them on my hard drive).

then it's pretty much just remembering what works - I don't get too fussed about repeatability - just find a grist and/or hop schedule that works nicely and play around with different varieties here and there. I rarely write my cooking recipes down and certainly don't take additional notes when eating - just remember combos that work and process fuckups that don't and try and improve the next time. Similar with beer except each recipe is written down somewhere.
