Just booked for the oktoberfest! 5 days in munich cant wait!!! :beer:
But less of me gloating, onto the beer.
Anybody got any good AG recipe's (or extract) for oktoberfest style beers?
And more importantly anybody tried making these beers minus cc'ing, as i am an ale brewer so do not have the facilities. A cellar at a constant 15C is the best i can muster.
I know they may not be true to style without the lagering but anyway to cheat it a little bit?

This is my fairly standard recipe. Using the Whitelabs or Wyeast yeast used for steam beers is way to go with 15oc fermenting temps IMHO.

Style: Octoberfest
Recipe Name: Oscar Octoberfest
Brewer's Name: Barry Cranston
Brewing Method: Mash
Starting Gravity: 1.058
Ending Gravity: 1.014
Alcohol (w/w%): 6
Bitterness (IBU): 25
Colour (SRM): 12
Specification Comments: Fits the specifications. The upper limit to OG varies from 1.056 to 1.060 depending which guidelines you use. In my opinion the OG should be at least 1.055 for this style or it is more like a Vienna.
Size of Batch: 23
Batch Size Unit: Liters
Extract Efficiency: 83
Fermentables: 48.2% 2.6 kg Vienna malt
27% 1.45 kg pils malt
18.5% 1 kg Munich malt
3.6% 0.2 kg melanoidan
1.8% 0.1 kg caraAroma
0.9% 0.050 acid malt
100% 5.4 kg TOTAL
Hop Additions: Tettnanger 4.7% pellets 15gm FWH, 25gm 80 min boil,
10gm 5 mins.
Hersbrucker 2.9% pellets 15gm FWH, 10gm 5 mins.

Wort Preparation: Mash in with 16 L at 66oC for 80 mins. Add 3 L boiling water to raise temp to 70oC for 10 mins.
Sparge with 27 L water at 75-70oC (top of mash) for 55 mins.
Boiling and Cooling: Boil for 90 mins. Add 1/2 tablet of whirlfloc last 10 mins.
Add yeast nutrient last 5 mins.
Cool to 16oC in 30 mins with immersion cooler.
Yeast Information: WLP San Fran (150 ml slurry from previous batch)
Fermentation Details: primary 10-12oC for 25 days (1.018)
secondary 10-12oC 19 days (1.014)
Other Brewing Information: Bulk primed with 110gm sugar and bottled.
Competition Results: 18.5/20 1st Octoberfest ANAWBS 2005

At the risk of telling you something you already know...

If you are going to go on the rides, do so before you've had a beer :)

Make sure you don't just go to the hoffbrau tent.

Remember, those barmaids can carry 10L of beer, those forearms can easily handle one drunk... (This isn't from experience. That was a travel tip from TNT or some similar magazine that I've always remembered and chuckled over...)

You are in for a great experience.

Then again, you may have been before and know all this but anyways, have fun, drink well and sing loud!

SWMBO and I were going to head over to France for the world cup, then head on over to Munich for Oktoberfest.
Plans had to change when we found out the little assistant brewer was going to arrive in May!

As for a recipe, I have brewed Barrys and it is tops. I could not get acid malt, didnt substitute anything for it. Not to sure how much of a difference it will make.

Does it benefit from prolonged storage, or is it good to go once its settled in the bottle? I never know why i ask this question because it dosent' matter either way, i will drink it asap. I fall into the 'just one bottle to see how it is progressing' trap! Curse my lack of will power!

And bconnery, the ride tip is a very good one, wish somebody had told me that a few years ago on my first trip!

Taste good early but even better later. Once carbonated put a few bottles in the back of the fridge and forget about them for a few months. Have a great time.

So do I !!! And we didn't even go on the scariest looking one, just the 5 loop olympic ring roller coaster or something silly like that...

I'm hopeless with the on bottle trap too. I know collect more and more stubbies, which may be your choice already of course, but I do a bunch of smaller bottles, and use those as my progress testers. I'd like to say this method means I am always able to drink a batch at its optimum time but of course you get one that tastes nice now, share it, drink it, then find a couple of bottles 3 months later and it is beatiful and you wish you'd waited :)

This is why I know take a minimum of 6 bottles from any batch away into a cupboard straight away...
