Been doing a lot of cyders lately. Just put one one the other day.

I think I got carried away with sugar, its currently at 1090.

It started fermenting pretty well, but now theres just a few bubbles on surface.

What do you guys think?

Mick

How long has it been fermenting?

Might need some champagne yeast to finish it off.

It's probably still fermenting, ciders don't tend to foam up as much. You can always check progress with your hydrometer.

And that's the way you should be checking for progress not visual or audio sensory signs.

+1 hydrometer or refractometer.

That's a mighty impressive OG for a cider, you will need to handle with care when it's time to drink it.

But as mentioned, you might need some specialty yeast to make sure it ferments out fully, and isn't too sweet. Fermentis t-58 is designed for high alcohol if you cant get your hands on any (or choose not to use) champagne yeast.

All the best.
