O'batzter is a classic Bavarian cheese dish that is served in Beergardens or Beer festivals.
It goes very well with beer and is normally served with plenty of onion and dark sourdough bread.
I grew up with this dish and it is awesome!

Ok here is my recipe for O'batzter (It is based on a recipe from what I think is the most comprehensive Bavarian cooking book that has been around for over 60 years):

  • 200g of mature Camembert
  • 50g butter
  • 1 small onion
  • 1-3 tablespoons milk or beer (normally lager but feel free to vary)
  • Salt, black pepper, sweet paprika (Hungarian)
  • caraway seeds (optional)
  • Scale up if you make bigger batches (I normally do 0.5-1kg of Camembert)
Warm up butter (if in a hurry a few seconds in the microwave help) and beat creamy with a fork. Add in Camembert and crush in with the butter. Add finely chopped onion (use about half an onion), beer, salt, ground black pepper and some sweet paprika. Give a good mix (its easiest to use your hands - thats been done traditionally). Depending on the maturity and your preferences you can vary the amount of beer/milk added to get the consistency you want. My tip here: put in spices in moderation, taste and add more to your liking. Optional: Add freshly ground caraway seeds but its easy to put to much in and it gets overpowering - careful there.
Put in a dish and layer some sweet paprika on top followed by cut onion rings.
Chill in fridge and serve with dark sourdough if you can get that (Aldi has bread called Hausbrot loaf that is quite close and tasty).

I certainly can.

Its called Bayerisches Kochbuch, edition 55, have a look here
Unfortunatly not available in english.
I got this one here with me in Australia and it is really a great book.
Everything in there.
If you have a look at the ratings in the link above you can see that other people also think so.

Thanks for the receipe Unterberg. Will definately give this a go.

I'd love to see some more traditional receipes which you may have for meats, etc.

O'batzter is definitly one of my favorits and easy to make too.
