When it's at the temperature you want, then wrap it in a spare doonah to even out temperature swings. I do that here in SEQ on the garage floor but also slip in a 5L jerrycan of ice, change daily :lol:
I'm currently doing a pair US-05s on the garage floor at the moment, holding nicely at 17.
 
so if i can maintain lower temps, even with standard brew kits like a canadian blonde, or mexican cerveza, is there much to be gained
from using the US-05 yeast? Or is it mainly something i would use for better brews, with hops etc..
