I want to put a beer down this week, hopefully to be ready by new years. Will be bottling.
In stock I have:

1× canadian blonde can
50+gms of Hallertau pellets
50+gms of Saaz pellets
50+gms of Cascade
500gms of dex

Anyone have a tried & tested quick brew?
 
No tried and tested brews with coopers kits from me sorry.
But maybe add some more light LME or DME to the tin, maybe use some cascade to up the IBU's and a bit of saaz and cascade for flavour/aroma additions.
Run it throughout the kits and extracts spreadsheet and see what you come up with.

Ok so this is what I went with...

Canadian tin
500gms rice maltose($1 from asian grocer)
Be2
250gms light crystal

20gms cascade @ 10mins
20gms of saaz @ 10mins
10gms of cascade @ 5 mins

dry hop 10-15gms cascade day 5ish.

OG 1045

Smells good and tasted good from hydro sample
 
I reckon you will be happy with that !
Do you have the means to control temps whilst fermentation is going ? Room with stable temperature, cupboard, old fridge ?
It really does make a difference.
 
I got a temp controlled fridge, but it has another brew with s-23 @ 14c at the moment. I can keep this one under control not too hot in melb this week, as usual...
