Wanted to do a malty APA using Mosaic and Maris Otter. Anyone got any tried and true recipes

Was thinking something along the lines of:

75% MO
20% Munich
5% Carapils

Northern Brewer @ 60 to 18IBU
Mosaic in the cube (calc as a 20 min add) to 18IBU

Thoughts?
 
I once beat Browndog (the APA master) at a mini comp when I lived in QLD, at the Brisbane Amateur Beer Brewers Club. BD himself said he really liked my brew and also advised that the best APAs can be made on UK malts as opposed to the often subdued American two row barley malts.

Personally I'd ditch the Munich - the MO can stand on its own, but use crystals such as Caramalt and Medium Crystal. I don't really think the Carapils would do much, I only use that in a paler brew such as a lager or a cream ale for head retention and it would tend to get lost off in a more malty brew.

Wouldn't it aid in head retention, as you rightly point out?
