No need Jules - Saaz all the way for a Bo Pils! You dont have a choice :D

I was trying to be a tight-wad and use a higher alpha hop for bittering though. I like to use plugs/flowers for flavour and aroma and pellets for bittering. But if I go Czech Saaz plugs, they are only a bit over 2% AA. I suppose I could combine with T45 Saaz pellets for bittering, which are 4% AA. Though was keen to know if anything else might suit for bittering, with a bit more bang for buck!

I must say that DrSmurto's 100% Pils, 100% Saaz that was in the 2007 SA Christmas Case Swap was a winner. In fact, that's what I'll be brewing this weekend!

Jules, if this is your first lager, there's nothing like keeping it simple. You might find you get a surprising amount of 'maltiness' from Pils alone. I suggest doing this first, and then adding adjuncts later if you think it will improve your beers.

I also believe that an AG recipe doesn't always translate well between equipment and brewers. Although I'll brew to DrS's recipe on the weekend, I've no doubt that the result will be different due to both my different equipment (e.g. slight variations in mash temps, etc) and technique (e.g. immersion chiller vs counterflow).

A little off topic, but glad I saw this thread, I plan to brew up an Alt from Brewing Classic Styles later in the week.

It calls for 11% aromatic, which I was told on here was melanoidan.

From what I've read, I'm worried that 11% is going to be way too much.

How will this go with the style? Any thoughts? Is this a typo in the book?

I bottled this one last week. I won't be drinking it for a month or so until I get back from holiday, but my hydrometer sample tasted great.
 
You went with the recipe exactly as in the book?
 
How about using NZ Motueka (B saaz). Think it's around 8% AA. That'll help reduce the hop mass, and probably taste great, on its own or combined with Czech saaz.

As for the melanoidon I have used it in my last few beers and found about 100g to 150g in a 22L batch is pretty good and you can definately taste it. I just finished a Boh pils today,

4.2kg Weyer Boh pils
.1kg carahell
.1kg Melanoidon
.3kg Munich
.3 carapils

Protein rest at 55degc for 30mins then 40mins at 67degc
giving wyeast 2000 budvar a go.

With a few minor changes to suit ingredients which I already had. But I definitely used the specified measures of melanoidin and munich malts.

The Weyermann site suggests that melanoidin malt can be used as up to 20% of the grain bill, but different styles are going to suit different amounts. This thread was started up with a Bo Pils in mind, which probably explains why most responses are on the low side.
