OK, I want to brew: Stone & Wood inspired ale this time.

And, I'm wayyyy happy with the malt profile of this LCBA. bn loving it.

I made the recipe below a few months back and was really disappointed by the hop profile. It had the a "cheesy" finish that I have found you get with hops such as galaxy, nelson and citra when used in high quantities after flameout. I think with this hop it would pay to use a little less with the late additions because a little bit does go a long way!

Just Pale malt and wheat malt....

Maybe I'll leave out the vienna/munich and just up the wheat for a bit more tartness.

Hmnnn.. cheesey. My other thought was to do a 50/50 dry hop with Galaxy and B-Saaz., i.e. 18g/18g each. Probably suppress any weird flavours by using Mouteka thus!

I'll also be no-chilling like this:

Whirlpool with spoon to ~85C
Start draining to cube
Seal cube
I expect/will make it drop below 80C asap after the lot is drained to cube.
 
Had a pacific ale for the first time tonight. Loved it.

Haha.. yeah, love them. Those six packs last the shortest in my fridge. Not a big fan of heavily bittered beers here.

Ordered some Galaxy last time on a whim, now I have some inspiration and a place to brew organised this weekend :)
 
Some of my favourite brews have been using a simple base malt (ale or pils) + a bit of wheat (Tony's Aussie Pale on the recipeDB is a good example)... although saying that I do love adding a touch of munich to a hoppy pale ale such as yours so i would personally keep that in.

But I still do think you should keep the aroma/dry hopping additions of galaxy to below 20g... and yes you could possibly use it in combination with another hop. Amarillo or cascade would be awesome but you could try b saaz and see how that turns out

Hmnn.. the plan so far. Will crack the grain tomorrow. I do definitely have amarillo on hand too. And I think cascade as well. hmnnn... decisions... Just didn't want to overpower the Galaxy aroma. B-Saaz seemed more subtle and somewhat rounded.... hmnnn.. might consult the crowd/smell the combo on the day and throw it in.
 
Just made Snows recipe, fg at 1006 so just turned the fridge to zero.
Sample tastes awesome, and for a standard batch has 5,0,& dry hops of 20, 30 &40, so 2g/L dry hops.
Cant wait till sunday arvo for a sample out of the keg.
