So what is a good dried lager yeast?
(and if anyone says its the stuff that makes beer i'll go mental)
OK, I won't say it then (as much as I'd like to).

Dried lager yeast is generally W34/70 or S23. The first is a generally accepted good clean lager yeast and the second is somewhat fruitier (passionfruit to my tastebuds).
Must be fermented cool (say 12-15 C) to produce the clean flavours expected of a lager.
See the package or lhbs for exact temp recommendation.

I'm currently brewing a Coopers Draught kit, with 1 kg DME and WL SF lager yeast at room temp.

Expect any lager yeast to throw up a lot of sulfur smells. The beer is not off, just ridding itself of the off flavours.

in my early days (earlier than my current early days :p) I tried a few lagers with a saflager yeast at room temp and ended up pouring the last 30 longies down the drain the other day. I'd been trying it everyone month or so hoping that gross flavour would mellow, but to no avail. Bear in mind that my room temperature was probably close to the mid 20s, so its a pretty shockin temp hike.
