Lagering Question

Hi,

For an upcoming AG brew I'm planning on having a go at the Belgian Dubbel recipe from BCS.

In the recipe it says that the brew should be lagered for a month at 7 to 10 degrees.

Unfortunately I don't have a dedicated brewing fridge so if I want to do lagering I'll have to do it in batches in my kitchen fridge.

So I have two questions:

Does the time that lagering starts matter - i.e. does lagering have to be done straight away?

Also, will a few degrees difference in temperature (I think the fridge is set at 4 degrees) make a difference?

At a lower temperature the lagering should be more effective, so this won't present an issue.

I try to lager down at 0 - 1 degree if I can. Depends on how cold your frige can go though.

After the ferment is finished I would be chilling it slowly down to your lowest possible temp. Can you transfer to something like a jerry can style vessel to fit into your fridge?
