i drilled my alli pot out with a speedbore. took around 10 seconds
 
+1 for the step drill some shops might refer to it as the Unibit, but nether the less, if you go that route, go slow and be sure to keep the cutting oil on it. You will have a 99.9% perfect hole and will always be an asset and time saver if you decide to go stainless, or put additional vessels in your brewery
 
Another +1 for Step Drills and Hole Saws.

You will get a round hole requiring minimal debur/cleanup as opposed to a rounded triangular type shape you will get with a standard twist drill.
 
I used a 19mm hole saw in my alu pot.
Took just a few seconds.
A minor amount of work with a round file, and all done.
 
if you know a plumber ask if you can borrow one of these:

s/s hole punch to put the tap holes in kitchen sinks etc.
used one on a keg yesterday, very clean finish.
