That Indian Brown Ale I did is mellowing out a little unless I'm getting use the paint stripper qualities of topaz. Was reading the cohumulone was twice as much as some other bittering hops, hence the harshness, esp when an early boil addition. May stick to topaz on the whirlpool or simply but back the bittering additions as you suggested. Good learnings. Also on a slightly related note, reading the alpha dissipates with time, which makes sense as IPAs are better fresh, but beta appears to hold up better over time. Anyways, back to work...
