Hello,

Some of the leaves on my hop plant are being eaten but no noticeable bugs/insects on inspection.

I've been having aphids do this to my hops and the sage bush and lately even the basil bush. Bit frustrating but can't do much until the rains subside.
 
Earwigs would be my first bet.

Crumple up a page of a newspaper(not too tight) and set it in your pot, leave it 3 days then open it up over a bucket of hot water and see what drops out. If it is earwigs, repeat the process till you have knocked back the population.
 
Its probably an Aphid or a mite. Put some dishwashing liquid mixed with water and spray it all over the leaves. This usually sort it out. When the plant gets high enough, strip off the leaves from the bottom foot or so as well.
