Hi everyone,

I'm planning on doing a couple of brews based on Ross's Nelson Sauvin Summer Ale:

4.5 kg Bairds Maris Otter Pale Ale Malt
0.4 kg TF Torrefied Wheat
15 g Nelson Sauvin (Flowers, 11.4 AA%, 80 mins)
15 g Nelson Sauvin (Flowers, 11.4 AA%, 20 mins)
20 g Nelson Sauvin (Flowers, 11.4 AA%, 5 mins)
15 g Nelson Sauvin (Flowers, 11.4 AA%, 0 mins)
25 g Nelson Sauvin (Flowers, 11.4 AA%, 0 mins)
15 ml Wyeast Labs 1056 - American Ale

The whole purpose of this is to, as Ross suggests in the recipe, test out some hop varieties and expand my horizons!

So I'm going to do it exactly as specified, but also want to do another with a very different hop - so I want suggestions! I've played with cascade, northern brewer, amarillo, EKG, POR, Saaz, Hallertau and have plans to use some chinook in a pale ale shortly - so lets try something new - but what? Plugs or flowers would be cooler, but all I really want is suggestions to expand my pallet!

Centeenial, for a real citrusy USA style.
Ahtanum gives a lovely tangerine/melon finish.
First Gold, for a floral English style, like a refined EKG.
Challenger for a lovely spicy English summer ale.

i second first gold, it's an interesting hop.

i also like NZ Styrian for English type things.
 
Willamette is a nice hop. :wub:

NZ Hallertau is slightly different from other Hallertau I've used, and worked well in a single hop ale for me.

I also enjoyed an APA made only with Glacier. Light citrus. Would work for an English Summer Ale too IMO.

I've just bottled the same brew for same reason except using Cascade. Next one uses NS flowers which Ross will get to me in next few days. Without trying myself I reckon a bit of cascade would add depth to Nelson Sauvin, but thats a bit cocky of me to say so based on my reading only. BTW Ross does not use Torrefied Wheat anymore. Go for regular wheat - its the head you want without clouds and transfer hopps added to the mash to hopps added at flame out. Also use Kopperfloc, it realy works.

With those flavours, may as well drink a bowl of fruit salad. Aussie day coming up go pride of ringy everytime.
 
Mat, get yourself some Magnum and Centennial. Magnum is my favourite bittering hop ATM, great for big robust beers.
