I have noticed that a few of the AHB members have a herms brewery, can anyone tell me why you went the herms way.
How long does a brew day last for you guys and what are the pros/cons of this system.

im just bringing this back to the top as im curious about this as well.from what ive read with the well modified malts around you dont really need to go down this path.
im hoping as well that this is answered by some herms owners.

I decided to make my new brewery herms capable more to allow me to put small amounts of heat into the mash to maintain a constant temp while recirculating, more than stepping to a new temp. Although I do mash out using it....

although i dont have a herms yet but i want it for the same reasons as asher, to maintain the temp through the mash. I already use a pump for a 2 level brew setup (dont like having heavy hot liquid above head)
