Hi all.

I Just upgraded to all grain after tedious amounts of malt extract brewing.

I purchased a 99 liter brewing pot with a diameter of 52cm and a depth of 49cm.

I've obtained a recipe that was brewed on a demo brew day at my local brew supplier, they cant remember the exact recipe on the day so the measurements of grain might be incorrect.
Apparently they used 23 litres of water and ended up with 18 liters but I'm not sure how to scale it up. I'm trying to end up with about 63 liters at the end.

Also, They would have been using a smaller pot, possible about 30 liters perhaps, and the Mash tun I use looses about 1.5 - 3 litres of mash water left at the bottom as its 130 litres in size.

But im confused as to how to match this with my pot as I'm concerned it may boil off more water due to its lager size.

Bit confusing but the main question I'm asking is how do I scale up from 18 litres post boil to 63.

I hear that using gas you can get upto 20% boil off. In my current urn set up & get appx 10%.

What OG are you aiming for?
 
There are a couple of things you need to consider when scaling your wort volume up. You need to consider boil off rate which will of course vary with a different kettle size and boil rate, and any losses due to the kettle.

Your kettle loss can be estimated by simply putting water in the bottom of the kettle and taking a best guess of how much would be left. Then just measure how much water that is.

In the past I've used this to estimate boil off rate: (R x R) * 3.14 * 0.0043 where R = kettle radius in centimetres. That will give a boil off volume (litres) per hour. I think that's the formula I used to guess mine before plain old experience took over. So in your case you would be looking at around 9L per hour. I'm not sure where I got that formula from but it's the one I used last time I changed kettles and it was fairly close.

Main thing though, keep records and adjust your figures in future batches based on what you measure.
 
Have you got any brewing software? I'd start with that. Enter the details of your system, desired outcome (ABV, bitterness etc) and then scale your recipe up.
Plenty of details on this in the software section.
 
in a 50 Litre keggle on gas, I start with 33 litres and usually end up with 23-25 litres into my no chill cube
 
I may have just got the exact pot you do.

My burner is crap and only just gets a running boils so my boil off is lower than it should be.

My beer smith is set at 6.75L 13.8% per hour or there abouts. My last brew I got it to within 500mls of my anticipated volume and I suspect my boil off figure is at fault.

I'd up it to at least what Sp0rk suggested " ~ 7L " as the keg has a smaller area to evaporate from and should lose less than our 52cm wide pot and anticipate a little more loss.

Better to have a little more lower SG beer than less higer SG beer IMO.
