Hi - I'm just starting my home brew activities, brought on by a surfeit of apples and pears, so am kicking off with some apple cider, and some nashi and pear perry. Mashed and pressed it last night, treated it with metabisulphite, and tomorrow will seed it with champagne yeast, so here goes! Wish me luck, please.
