From The SMH.

You may not think that beer and ice-cream belong in the same sentence, let alone the same dish - but beer ice-cream is turning up on the menu.

The Heritage Belgian beer cafe in The Rocks has "a trio of fruit beer sorbets" made from apple, cherry and peach beers.

Hummm... interesting.

Since I have a really good icecream maker at home I might give some a go next time I make a batch. I have made a lot of wine and spirit icecream/sorbet before but never beer for some reason (too busy drinking it I guess).

I can see an icecream flavoured with something big and malty like a dubbel or even a stout (though black icecream might not look so good). Possibly 10% in a regular mix would do the trick. Something lighter might make a good sorbet with some egg white for body. You would need to use malt driven styles as a hop icecream probbaly wouldn't go very well as a dessert. Hop sorbet as a between course palete clenser on the other hand...

I'll make some and report the results.

Cheers
Dave
