I've got a 50l keg of commercial craft cider I got for the price of the keg, but it's back sweetened and I like dry cider.

I'm thinking a bout dropping some yeast in to chew up the sugars and make a strong dry cider.

Any tips or yeast recommendations?

Only cider I've made was dropping beer yeast in Apple juice bottles.
