I had a look at your heat chamber, seems like a RIMS vessel, is this correct? Does the element directly heat the wort passing through the chamber?

yep, that's right. It is for direct heating, and HERMAN has one immediately after the pump outlet. I ran a HERMS configuration for about 5 years but the speed of heating between steps eventually spurred me on to trying a RIMS setup. I can't say I've noticed any terrible effects from direct heating, but control of the chamber is definitely more critical. It really needs both PID and solid state relays. The pretty graphs on my blog page show the result of the other chamber I built which has a 3600W element in it.
