Had a thought on the train to today and I want run it by a few experienced people.

I'm looking to get the flavour of Ginger beer with the body of a stout.

1 can Coopers Ginger Beer
500g Dark Dry Malt
250g Maltodextrin
1.5kg Liquid Amber Malt

Yeast: WLP002 (English Ale Yeast) or WLP004 (Irish Ale Yeast)
Makes 23 Litres

Not sure what hops to use. A mate's mentioned the Goldings is always good in a stout. Not sure what to use for bittering though, or even it it needs it.

If I'm right, CGB has a lot of saccarine and the taste comes through (used it twice for two pipe cleaning results). Reckon you would do better to make a stout and add ginger.

Then i'm left with the question "How much ginger do I add?"

I ended up buying a can of stout and a can of ginger beer from the LHB, I think the ginger beer was Morgans. Would that have the same amount of saccarine?

I guess i'll find out.

Mate....

So glad you bought a stout can - because the original recipe was way off.

If you want body - do a small steep 2Ltrs water - mash with Carapils (150) and some oats (75) with a teaspoon of dry ginger in warm 64C water over night.
Then sieve into a pot - rinse with 2L of water and biol.

Optional:
Cinamon and nutmeg goes well with ginger - could add 1/2 and 1/4 respectively.
Once racked to secondary - taste and dry ginger if necessary.
