10g simcoe 15min.
10g zythos 10min.
10g simcoe 5min.
10g of each at 5days.
US 05.
OG 1060.
22l.

Would it be worth pitching another pack of US 05 since the OG is high?

Nope, I wouldnt but I make sure to give it a good thrashing with a whisk after 12 hours.
