Hi guys

Just looking at brewing the simple Coopers Dark Ale recepie from the coopers website

  • 1.7kg Australian Pale Ale

  • 750g Thomas Coopers Dark Malt Extract (half the can)

  • 200g Sugar
what would be the result if i removed the sugar and used all the dark malt can?

any other tips suggestions? keen to keep this one really simple as i want to use it as a base to compare future dark ales.
 
I would see if your local brew shop has dried dark malt. Much easier for splitting.
 
I would keep the sugar in, it's probably part of the recipe to thin the beer out a little and dry it out a bit as well. Liquid malt worts don't attenuate as well as full grain worts so the sugar plays a part.
 
Went to the LHBS and ended up comming home with a Morgan's dark can and the shops dark blend which contains dex corn syrup LME & DME

Will give it a go
