Hi .Merry Christmas to one and all.

When i go to drop down box and select weizen/weissbier CO is 3.6 - 4.5.
But Wyeast 3068 pk says, High CO2 levels, typically at 2.7 - 3.2 volumes is desirable for best presentation.
So do i go by Calculator range or Wyeast range of CO

I think there might be some German style vs American style issues coming into play here.

I just had a look in Designing Great Beers to double check what I thought and Ray says carbonate to nearly double that of lagers: 3.6 ~5.1 vols CO2. In the general discussion of the style, he makes the point that the new, "American version" of the style was coming through and being made being differently to the German original style. So then, looking in the more modern BCS, JZ recommends 2.5~3.0 vols for this style and has a recipe for what would undoubtedly be a cleaner tasting beer (ie more American style).

I don't brew that many of these, but I go 4 vols. Carbonation is only one part of making the style right. If you go around 3.5vols, you will be able to adjust up or down depending on what your preferences are for the style.

Don't worry too much about it. Just brew it, carbonate it, and adjust from there in future batches. You'll get the feeling for too little or too much; just don't make any bottle bombs! :)

Cheers

Yeah, don't know the American style either, just what I've read. If you find it's a bit high. just remember you can swirl the glass a bit to get some of the CO2 out of solution for a less carbonated beer.

Either way, enjoy your beer!

So, what does this apply to,...'Wyeast 3068 pk says, High CO2 levels, typically at 2.7 - 3.2 volumes is desirable for best presentation'. surely this would be German style, or does this have nothing to do with priming CO2.
