Last night was pizza night, leaving us with the oil remnants of:
Marinated sun dried tomatoes in olive oil,
Anchovies in olive oil,
Kalamata olives with chilli in canola oil,
Mixed marinated Mediterranean olives in olive oil.

So tonight was leftovers of Pizza and the vegetables from the previous night.

Bubble and Squeak fried in the leftover oils. The aroma in the kitchen was something to savour, and the bubble and squeak was equally tasty.

I cant throw out good oil leftovers like that either. To think some people throw it in the bin!
My favourite instant salad dressing is 2 part oil left of jarred Grilled Eggplant and 1 part home made cider vinegar. So simple and yet so complex.
 
Indian restaurants keep their left over oil - so called "tempered oil" as it adds a nice complexity to curries.

Best way to make tempered oil is to cook at least 30 onion bhajis in a batch.

Whenever I cook a duck or chook, pork or lamb the pan-fat gets reserved in a jar and never gets binned. My next project is to smoke six chooks in my Hark Smoker oven, for a get together, and retrieve all the smoked spiced fat from the water tray at the bottom. :icon_drool2:
