I decided to experiment today by making a small batch of beer jelly. I've made wine jelly before which is very good! The beer jelly is delicious! I used a 12oz Youngs Double Chocolate and a 12oz Dos Equis lager (I know it's a strange combo, but I didn't want to sacrifice 2 bottles of Youngs).. The outcome was quite interesting! It actually doesn't taste anything like beer (which kinda bummed be out).. If I had to describe the taste I would say it's a cross between Dr. Pepper and apple juice with a citrus after-bite.. Strange! I'm not sure where those flavors came from, but it's good none the less. My next experimental batch will be with an IPA. I want to see if the hop taste/aroma will carry over.

There's a good article in the current BYO magazine about making beer jelly. I think they mean jam though.

Or do you mean jam?

I'm confused.

Yes I saw this article and haven't got around to reading it yet. I assumed it was about jelly but you're right the title would've been "beer jell-o, y'all".

No reason why you can't just add dissolved gelatine and some of the sugar (also dissolved) to the pale ale without boiling it first.

I'm glad it turned out well cafelinhchi. how'd you do it?

I've read the BYO article and have been planning to give the beer jam a shot. just need to get the pectin. seems easy and doesn't use much homebrew, so worth a shot. if I hate it, I can chuck it.

I was thinking that as well. Isn't the purpose of boiling just so that the sugar/gelatin dissolves? Couldn't you just do that in a little water (or beer - or even wort) and make a gelatin/sugar syrup which you can mix into the beer? Or would that drop in temp too quickly and set prematurely?
 
I'm trying it right now. Has been boiling for a while as I don't know what I'm doing, and doesn't seem to be setting right :)

Tastes nice. A bit strong as I'm using a double ipa, but so far so good

I purposely chose a bottle with bugger all yeast in suspension, thinking that'd cause off flavours.
 
I would be tempted to try agar agar rather than gelatine, agar is vegetable based rather than animal so I think the flavour to be more complementary.
You should also be able to boil up the agar separately then add the beer in, which would hopefully do less flavour damage.

The recipe I followed used fruit pectin. There's no liquid other than beer, and it uses more sugar than beer, so It may water it down too much by boiling it water. Not hard to make at all though, so easy to do side by side
