I`ll apologise in advance for a stupid question
What is the significance of the size of the bubbles in beer ?
Generally they seem small but sometimes I see larger bubbles or a combination of both small & big bubbles in the same glass ?

I was trying to think of a stupid answer but I couldn't... so I guess maybe smaller bubbles last longer, give better head, and aren't as coarse on the tongue.

is it too soon for a Bubbles the Monkey and Michael Jackson joke ?
;)

I seem to recall someone telling me nitrogen makes the bubbles smaller and stops the CO2 from escaping from the beer as quickly... Haven't read Bribie's attachment yet though - that might have the answer.
