Same here, cooked on wort all over the outside of the kettle is a pain to clean. Plus, it gives me something to do whilst waiting for it to come to the boil.

Tangent. Simple, don't add your hops until the boil has started and skimmed. If you want flavour just add them when the the flame is off.

I read that adding a little bit of hops the the kettle before the boil )FWH) will break the surface tension and prevent boilovers but it hant worked for me yet.

I boil for 75 min and dont add my hops till 60 min.

If i use POR flowers i chuck em in my hopp basket FWH though.

still dont skim

I skim, except when FWHing. It means slightly less break material in the fermenter before I rack off, so slightly more wort.

Sometimes I reckon it makes a small difference in terms of clarity of flavours or something, but who knows. It looks like something I don't want in my beer, so that's a good enough reason for me.

Has anyone noticed that JW pils malt gives a REALLY thick, dense scum? Must be really high protein or something...

Yeah I have noticed that, will have a bag of JWM Pale soon, so I will be able to compare, but the Pils does seem to give a thick scum
 
I skim for no other reason than I find the scum layer seems to encourage boilovers.

I do, most of the time.

Do commercial or micro breweries skim the hot break??

I have done both
There is no differance IMO,so no I don't skim anymore.

Boil overs

You may already know this but perhaps it is help to some newer brewers
Keep a spray bottle of cool boiled water,if you can see a boil over building up spray the surface with the water.
You may have to keep this up for a little while while the break is happening but,you'll never have a boil over again.

Hmm... i haven't skimmed before and have thought about skimming to avoid boil overs... but, I have a 100L pot and currently don't do huge boils (yet), so it's not an issue right now. However, I am thinking about trying out both 'spray' and 'skim' methods...
