The Californian common in Brewing Classic Styles has about 50g of choc malt in it but he also writes that if you want to brew one closer to Anchor Steam you should drop it and a couple of other malts making it just base & crystal.Matplat said:Hmmm just checked the OP's recipe, no pale chocolate malt.... seems like zainasheff has mislead me on this one?
I guess the choc is in there for colour and if so I would use some cold steeped Carafa instead.
