I've always found that when really young an AG beer has a distinct grainy character that leaves it seeming more bitter.As it ages this smooths out and the flavas meld and round out.
On that basis you've got a winner on your hands

i just wanted to see how quick i could knock one up this time around (was aiming for 7 days)
usually i'll be happy for them to take their time and mature.

is say 2 weeks in the fridge enough time for maturing?

time to up the anti on my ag setup :)
 
I did an amarillo apa type like yours one brew back, turned out a great beer, easy to drink and everyone loved it. It did not last long.

I didn't let mine age at all, im always falling behind in my brewing :( 2 weeks should be a great start.

just an update, well the keg blew dry long ago and i'm nearing my last few bottles.
i am really happy with the flavour / aroma on this hop bill perhaps up the bitterness
a bit but it was definately missing something in the malt department!

i'll have to do it again!!!

had a look at what i have available and found a bag of "IMC Munich"
it seems very low in colour around 12 EBC i think compared to the usual
Munich malts i've seen.

will this give simular flavour to the other brands?

how much should i use?

add 1 to 2kg to your original recipe in place of the pale.
