After a month in the primary, using a culture I picked up from Wildflower brewery in Marrickeville, I've now got got 20 litres of nicely soured ale which is ready for secondary fermentation. hopping and crashing

Hello brewers, would it make more sense to dry hop after crash chilling? That way the hop oils retain their aroma and are still volatile when bottled. If the hops go into the fermenter before chilling, they're in there for possible too long and the volatile oils are messed about with low temps...

    Hops for a hoppy red?

hello brewers, i'm looking for some hop inspiration to give a classic red ale recipe a bit of a tickle and produce a more pronounced but nicely balanced hoppiness. i've been really enjoying Nail Brewery's 'Hoppy Red Ale', and the Karl strauss 'Red Trolley Ale' and feel inspired to head down that...

    Fermented at 25 degrees

Nice work, matey. I found heaps of things to worry about when I first started. And almost every solution involved relaxing and letting the beer do its thing. Good luck with your next brew.

    Stout recipe

Hey matey, I had a good result using the Mangrove Jack Roasted Stout pouch made up to a 21 litre brew with 1kg Light malt extract and 250g maltodextrin. A nice beer with assertive favours and a smooth finish.

    Dry hopping a cider

I've been sniffing around the bottle shops here in the inner west of Sydney, but no luck in sourcing a commercial or craft hopped cider. I still have a niggling feeling that if hops and cider were were a natural fit, then we'd see more of it. But it'd be definitely interesting to checkout...

    Dry hopping a cider

hello I get the sense that our American fiends will hop the bejesus out of anything vaguely resembling an alcoholic beverage, including cider. Has anyone got a view about whether dry hopping a cider is an interesting thing to do....or just daft? cheers, gaz

    wrestling with a porter?

Thanks for chipping in, gentlemen. The beer turned out exactly like it said on the packet - a roasted stout. I ended up infused the cacao nips for a week in vodka and added that 7 days before bottling. It's added a very mild chocolate note, but nothing like what I was after. I've since moved...

substituting wheat LME for Light DME

hi there i'm putting together a Brooklyn Brown Ale clone and the recipe calls for 2.8kg of light DME. I've got 3kg of Light LME in the shed but using a conversion factor of X 1.2, i'm still short of around 300g of extract. The recipe also has wheat malt extract (226g), which i have a decent...
