    La Fin Du Monde Clone

Uneekwahn, It turned out well in the end. I've drunk all but a few (maybe four) stubbies. It would have been less, but I didn't label them at the time and I often opened one of them when I was looking for an APA I did at the same time. It's definitely mellowed over the months, becoming very...

    Yeast Murrays / Unibroque

Wyeast released a Very Special Strain last September that was yeast that Unibroue uses in La Fin du Monde. They called it Canadian-Belgian Ale, WY3864. I used it to make a La Fin du Monde clone, and unfortunately didn't harvest any. Whoops. :-(

Old Yeast, Starters, And Mr Malty's Pitching Calculator

That I did not know. I like my hefeweizens fermented cool to keep the banana down so it makes sense that 3944 would be the same. I'm aiming for a Hoegaarden-style as much as possible. Thanks, Len

Old Yeast, Starters, And Mr Malty's Pitching Calculator

I was rummaging through the bottom of the vege drawer in my fridge on the weekend, and I found a packet of Wyeast Belgian Wit yeast manufactured on 16/11/06. I was planning on a bohemian pilsner for my next batch, but this yeast needs to be used ASAP, so I warmed it up and smacked it. It's...

    La Fin Du Monde Clone

I only bottled it last weekend so it's still carbonating. I missed the OG by 10 points and made up the difference with dextrose, so it fermented down to 1.004 - about 10.5%. I've just had a small taste and it's pretty toxic stuff - I'm calling it Belgian Death Ale :-). I'll post again when it's...

    What Do You Do?

I second the suggestion to use a hop bag. If you can't wait for one to arrive, buy a cheap pair of pantyhose, cut the ends off, and tie shut with a paperclip. Works great. I have to admit that if I end up under target, which I do regularly because my kettle's too big and so measuring volumes is...

    La Fin Du Monde Clone

I found La Fin Du Monde in 1st Choice bottleshop in Ashfield! Stoked! Apparently they normally have it in stock. It was $28 for a four-pack, though. I've just had one and I'm going to keep the rest to compare to my brew when it's ready in a few months. :D :D

    Whats In The Glass Pics

An Amber ale, my first AG batch from September. I coloured it with roast malt and used too much, so it's at the "dark ruby" side of the spectrum. It's a bit more chewy than I was aiming for as well. It's still a good drop for what it is, though. It's much better now than it was after two months...

    Anyone Heard Of Hop Tea?

Hehe, I did this once as a way of trying to taste the difference between different hop varieties. I infused a few pellets in a tea cup with water from the kettle for about 10 minutes. You can imagine that it ended up tasting like lawnmower clippings, as the alpha acids hadn't isomerised and the...

    La Fin Du Monde Clone

Thanks to all for the good feedback. I probably will reduce the coriander, as I don't remember it as having a strong coriander character either. I'm having trouble sourcing Styrian Goldings in Sydney before brewday on Saturday, so I'm considering using Fuggles instead, which is apparently a...

    La Fin Du Monde Clone

G'day, I had the opportunity to sample more than a few La Fin Du Monde belgian strong golden ales when I was in Quebec a year or two back, and I thought I'd have a go at an AG clone. Here's BeerAdvocate's info page on this excellent beer. I found a recipe here, reproduced below: I've got...

    Re-bittering

I stuffed up my IBU calculations once, before I realised that wort SG affected hop utilisation... I realised after 24 hours of fermentation, so fixing it was simple as working out the hopping schedule to make up the difference given plain water (SG=0), doing a boil of about 500mL, then tipping...

Is Secondary Cold-conditioning Necessary For Bottled Ales?

Thanks to all for the info - for my current ESB I'll probably leave it in primary for two weeks, adding finings after seven days. I'm usually ok about leaving most of a batch in the fridge for a week or two before drinking, so that will settle out of lot of stuff. I reckon I might invest in a...

Cask Ale Available In Sydney Anywhere?

Can anyone confirm? I live one block away and I keep dropping in looking for homebrewers and finding end of year school socials instead.

Is Secondary Cold-conditioning Necessary For Bottled Ales?

I've been following a standard procedure with my ales Primary until the SG stops dropping, about a week Rack to another fermenter, still at room temperature, for two weeks Bulk prime and bottle Wait two weeks for carbonation Transfer bottles to fridge at normal fridge temperatures for at least a...
