it is a harsh bitterness. It is not overly bitter just very resinous. Reminds me a bit of pine sap without the pine flavour and not astringent. If that makes any sort of sense.
The Cascade was a bit old about 5 months or so. It was stored in the fridge in one of Ross' special zip lock...

Moving house over the next few weeks and I've had to but brewing on hold and watch the stocks begin to deplete.
Good news however. :super: The new house has a darkroom that is going to be my NEW brewery. Can't wait to fit it out.

It is definitly a very ordinary beer. I didn't cc it. I thought you didn;t need to cc wheat ales and that they drunk best when fresh. I'll take your advice and cc a couple of bottles and see if it makes any difference.
I'll also give the alternate yeasts a blast next...

Sounds like an intruiging (sp) brew. Something I'd like to give a go to in the not to distant future.
Just a thought on the sweetness. What about adding some Lactose, as in sweet stouts. OR you could do what wine makers do and use some metabisulphate to knock the yeast on the head...

With the goo in there as well, I wouldn;t worry mate, all sounds spot on. I agree with Voosher you are looking at over 6%. Give it a couple more days and test it again. If its gravity has not moved then bobs your uncle.

Did you add a can of goo in there as well or was it just the ingredients that you listed.
If it was just the ingredients listed then I'm not quiet sure how you thought you were going to get 8%, you might get 4.5% by the end. My calculations put your OG at about 1.046 which would give...
