Wlp550 Or Safbrew T-58 For A Wit?

Hi all,

I've got a 3kg ESB Hoegaarden kit and I'm wondering which yeast I should use.

I have a packet of Safbrew T-58 that came with the kit and also some White Labs Belgian Ale, WLP550 liquid yeast.

Also, what temperature should I be brewing at?

It's been a while since I used wlp550 and it wasn't in a wit but I would probably go with this as opposed to the T-58. I just checked the Whitelabs site and they mention this yeast as a possibility in a Belgian white beer. I would suggest fermenting around 20c to keep the spiciness in check to a degree. If I were to use T-58 in a wit I would keep the temps down as well. I found it can become quite spicy at higher temps. Spicy is good but with all the nuances of a wit, subduing the character of either of these yeasts may help the finished beer.

In saying this I have no idea what is in an ESB Hoegaarden kit. I'm talking of brewing a wit in general.
