G'day everyone,

I had in possession a good amount of grapes (15kg or so) that I was considering making into a wine. But due to time constraints, storage space and questionable quality, I decided to dump the grapes, but no before purchasing a wine yeast beforehand.

The yeast is a dry wine yeast, Red Star Premier Cuve 5g sachet, which I have used before to make a cider, which was very dry and slightly bland.

My question is, what else could I use this for?

I am going to be away overseas from the 16th of August until October, so I really don't have the time to mess around with something short term, so i'm either considering a BIG beer or another Mead, that will require a long fermentation.

Any suggestions are welcome.

The Saison Dupont yeast is supposed to have originated as a red wine yeast. Perhaps a Saison.... I have brewed a Saison, but not with a wine yeast, so YMMV.

It's an experiment I'd like to try some time.
