I would like to make a Raspberry Wit using tinned raspberry puree .

Does anyone know where I can get some ?

Dunno about tinned puree, but you can buy frozen packets of berries at the supermarket. I think Insight also posted a link to a place once where you can buy bulk frozen berries, they're somewhere near Hornsby from memory....

thats them schooey. i havent used them pumpy but they came highly recommended to me a fair while back. i get mine from orange.
i find the supermarket ones tend to be missing out on aroma so you need twice as much.

If you want puree just boil up with a little water to just cover and sugar to remove tartness if you want, boil gently for 10mins and puree.

I used these from Coles, 6 bucks per 500gm

I used 1KG in a wheat, the colour couldn't get anymore bright red and the taste was extremely tart and berrylicious.

when did you add the frozens do you pasturise ?

I partially defrosted them (in the sun outside on a chair) for about an hour, then put them in a spare fermenter and racked the fermented wheat on top of it and left for two weeks.

ok pumpy the one that was in the nsw case swap was 1kg. i get them frozen then put in a pot mash, treat with half a candem tablet with a little water and leave for 24 hrs then add to the secondary and rack on top of it.
 
actually i think hes getting ready for the easter case swap just for fgz.
 
What does the Campden tablet do Barls?

Is that what they use on grapes in Wine making ?

will that affect the yeast?

Not too sure about that pumpy. Just explaining how i make it at work for desserts. Would be very keen to see a recipie for this as i am keen to make one too.

I made a raspberry wheat a while back but lost it to my regular infestion....... that i seem to have now kicked.

I droped 2 packs of the supermarket frozen fruit in a fermenter and racked onto it. After a week of soaking it had (the fruit) gone white and the beer was pink. But it grew something nasty on the top and i tipped it.

If i did it again i would speed the process up by warming up the fruit and blitzing it before adding it to the beer.

I recon 48 hrs would have it done like this and the bulk of the solids settled.

Thats what i will do next anyway.

I believe campden tablets are used to kill wild yeast. It is what they use in wine making. The 24 hour wait allows the active ingredient to decompose to the point where it won't effect the yeast. Without the wait it would probably kill the yeast.

One of my Watermelon Wheats had a white powdery substance on top of the fermenter.

What is it?

Have still kegged it and it's drinking reasonably. Like a funky watermelon beer.
