I discovered that a local (for me) company in Mittagong malts wheat and supplies a number of companies ( and a friend tells me Little Creatures with kibbled wheat) with some ingredients. I rang them Thusday and they agreed to supply me with 25kg bags if I pick up- they usually sell by the pallet only. Does anyone know what kibbled wheat - basicly cracked wheat could be used for. They also make malted wheat flakes - any ideas for how to use these.

raw wheat is pretty much only for Witbier, although it could be used in a variety of other wheat beer application, such as American wheats, depending on the enzymic strength of your non-adjunct ingredients.

As for the malted wheat flakes, you should be able to substitute them for malted wheat in any recipe you want. Be aware that they, in a similar way as wheat malt, might contribute to a stuck mash, so you might need to add rice gulls to aid run-off when sparging.
