6 hour mash + added enzyme + saison yeast = one VERY dry beer. Currently -0.4 oP, still going down. 9/10/17

        I'm just playing around seeing how low I can go. I expected not to like the result much but it's surprisingly good.

        BTW it hit -0.9 today.

        Looks like it's finally finished, somewhere around -2 oP and 9 % ABV (by back calculation from refractometer reading, I don't have a brix hydrometer that goes that low).

        I will take a sample to work and measure it with the alcohol hydrometers to confirm.

      Futzing with mill settings, I went a bit tight. Slow sparge (2 1/2 hours) but 98% BH efficiency.

        98% is pretty freaky. I got 89% highest but started worrying.
        Final run off around 1.006. Was worrying about astringency but I'm still unaware to identify astringency flavor so maybe It was just a good dry low cal beer...

      Did you get much interest in your IBU testing proposal ? In my experience home brewers like to say
      they will do something, I think they are telling the truth at the time , but when it comes to
      parting with the cash ,they go MIO.
