Have a tin of Muntons Wheat Beer which I want to put down to build some summer stocks for those hot thirsty days. Was thinking of this recipe:
1.8 kg Wheat tin of concentrate
1 kg Wheat malt
500 grams yellow box honey (pasturised at 80 degrees C and added to the mix)
Munton yeast, which came with the tin

Should I substitute the wheat malt for pale malt or mix equally ie 500 grams of each?

Should I use a dedicated yeast or can someone confirm that the Muntons is a wheat malt?

so many things to learn....

If when you say "Wheat Malt" if you are talking about Muntons Powdered Wheat Malt Extract, then yes it is made from 60% wheat and 40% barley.

A Kg of that would be my first choice

Adding the 500g of honey is going to push the alcohol up over 6%, and yes good Yellow Box would be a great choice.
Using it or not is going to be a question of personal taste, for me the malt would be enough - tho I would be thinking of some Tettnang or Spalt as a finishing hop (but I' me a totally unreconstructed hop head)

The yeast question is going to be harder, the one under the lid is a fine neutral ale yeast (made by Saf), if you were using the honey it would be a good call, as it will let the subtle honey flavours show through.

If you go for one of the "Wheat Yeasts" leave the honey out - its flavour would be lost behind all the banana a clove.

The problem is that all the choices could be good, you might have to try a couple of different brews and see which suits you taste.

I'd use the Muntons Kit + wheat malt (liquid or dry) and a quality liquid wheat yeast.

My fave yeasts with this kit are W3068 or W3056.

Produces a fairly good weizen that could rate with the winners in a competition.

I definatly use the Wyeast 3068. I made a wheat beer using just the Munston kit, Wheat Malt and 3068 and it turned out tops. I had friends asking if they could have some to take home (what am I a bottle shop??)
 
MHB, good advice. I particularly want some subtle honey in the brew so I'll use it for my first one with 25 grams of tettnang and also put down another with just a good liquid yeast as dsicussed for that clove and banana flavour.

i'm thinking of doing a similar recipe, without the honey, and possibly using w3638 (bavarian hefeweizen).

how do you guys think this will turn out?
