Hey all,
I was getting all my gear together to bottle my second batch of beer (Toucan Amarillo hopped Lager/Draught) and it dawned on me that it has been four weeks in the fermenter rather than the three I had been thinking!

I am not really panicking *what can ya do anyways* but just wondering how long others have left their brews for and what are the outcomes (eg is there a period where it is way too long?)

Cheers all

Chris

had a belgian imp stout in primary for 2.5 years, went on to win a national medal

it all depends on what temp the fermenter is sitting at and the yeast strain but i have had ales on primary for five weeks or so with no apparent effects on the beer.

on purpose or did you loose the fermenter until you went to move house, followed by a moment of "oh... that's where that got to - better bottle that now"?

I did a toucan (lager + stout) that I thought had not finished even though it had. It must have been 5 - 6 weeks in primary. I used the 2 packets of "under the lid" coopers yeast. It had a vegemite flavour, but that may or may not have been due to the length of time in primary.

I have left a few lagers 3-4weeks to ferment and left on the yeast to CC for 5-6 weeks so 10 weeks I guess mine is

For ales, four weeks is common for me. Often six.

Don't worry about it.

You are bottling a draught?

Ummm Yip. Is there something I need to know?
Bottles are all I have mate.
In-fact I feel fancier on the second batch as I have cleaned up some swappa bottles instead of the 750ml Plastic ones they gave me from the LHBS :beerbang:

Ditto, Ted. For my normal ales/porters.

This last batch has been around twice. 3 weeks initially, plus a weeks racking to lose all the malt sludge. Then another 4 weeks back in the can with a whole extra bunch of sugars and malt and some Shiraz yeast. It's now in the racking container again with some hops and hopefully will be ready for bottling this weekend. Then, about 6 months in the bottle, I reckon. But this is a bit of an experiment! ;)

I had a russian imperial stout in primary for a couple months. Only beer that I've had affected by autolysis

Under temp control I've had beers out to 4wks or so with no noticeable problems. However I did have a batch I pulled from the fermenting fridge, and I'm not even sure why ? Think I needed the fridge for another beer and thought it would survive a few days 'outside' to finish off. Bit over 2wks of +25 temps had me worried and I'm fairly sure that had a vegemite (autolysis) flavour to it.... either that or I really couldn't be fracked with it anymore.
