I managed to get a brew in today - a nice pale & hoppy brew, missed my OG by 4 points ... so not happy with that but hey - hopefully it will be a good one.

60L Batch
Target OG 1.052
Target IBU 39-40
Mash 2.5L/kg 67c 90 mins
Boil 90 mins

87% Pale Malt (Maris Otter)
10% Wheat Malt
3% Cara-Pils

Pearle 90 mins to ~13 IBU
Cascade 90 mins to ~13 IBU

Pearle 15 mins to ~7 IBU
Cascade 15 mins to ~7 IBU

60g Cascade added to the boiler during cooling and steeped at 70c for 30 mins

I deliberately lowered my efficiency today to see if there is a difference - effectively it meant that I stopped sparging at 1.040.

We will see...

I got 3 x FV's with 20 L in each - 2 have s04 one has us-05

Seems to have been a very busy and rewarding day. Be intereseting to get your feedback on the US05 and s04.
 
Looks like you've been productive Wez. Jasper doesn't look too excited though. Is he a Cocker? :) (Got 2 myself).

Good work, Wes. I'm interested to see that UK brewers seem to be getting onto those Colonial Troublemaker's hops such as Cascade :p despite the Boston Tea Party.

I'm also swapping between US-05 and S-04 with my ale brews at the moment. I've had a fair run of US-05 and find they go on forever with a lingering bubbly pond scum on the top, but clean up nicely in secondary / cold conditioning. I hadn't used S-04 for about 8 months and last week did a strong old style UK Mild (around 1054 OG) and it's done and dusted in five days, haven't done a SG reading yet as I'm off to work today but very impressed so far.

So I'll be interested indeed to find out how you went on with the two yeasts.

:icon_offtopic: Just before I left in 2006, I took a tour of Fullers. Guess what they had boxes of in their hop cool room? US Cascade!

Interesting to see a regional experimenting with US hops rather than a micro like Crouch Vale or Dark Star.

But cascade! I hope they use it more frugal(Fuggle) then me :p
 
I'm sampling the s-04 corny of this now and i'm liking it

i'm not convinced about my hop utilisation I don't think that this is 40 IBU

it's nice and clear(ish) will be better in another week clarity wise. I really like the Pearle/Cascade combo they work well together this reminds me a bit of SNPA I may give the other corny (US-05) a higher carb and serve it through the tap rather than the beer engine.

Will post a pic when I'm happy with the clarity
