Im thinking of getting a few kilos of specialty grains (possibly 8 or 10 different) to keep on hand so i can put brews together anytime.
What do you all think would cover most bases.
Exclude HB choc and 150 Crystal as already in stock.

I don't think I have 10 favourite specialties. But here are the ones I like:

JW Dark Crystal
JW Choc
Bairds Pale Crystal
Weyermann Carared
Weyermann Carafoam
Weyermann Melanoidin

carafa
caramunich
amber
biscuit (now we can get it)
caraaroma
carared
Roast barley
flaked barley
pale choc
carahell

Add to that your bases, ale, pils, vienna and munich and you can do anything

JW Amber

Hint: get in 500g lots till you find what you like.

My grains always in stock are

Carared
Dark Crystal
Joe White Choc Chit
Melanoidin
Carafa T3

Thanks for the reminder, I'm going into lagers now it's winter and I had forgotten all about Carapils, jogged my memory, I've used it in partials and kits n bits, may try it in AG and see if it adds anything useful to my Aussie Standards.

From Light to dark:

Carapils
Crystal 20 (Carahell, carared, JW Caramalt)
Crystal 40 - 60 (Caraamber, CaraMunich II, JW Crystal)
Crystal 120+ (caraaroma)
Carafa Special II
Black Patent

Specialties require mashing:
Melanoiden
Amber
Roast Barley (i don't think you NEED to as its burnt to the crappers, but probably should if there is anything to convert there)

+1 Yeah, that works for me

whats the difference between carafar 1, 2 and 3?

respetively in EBCs

800-1000 black
1000-1200 bloody black
1200- 1500 black as the ace of spades

Even just 100g of the T3 plus 200g choc will get you up to Kent Black or Tooheys Old no probs.

Cripes, if you didn't knwo the difference before, you do now!

It really depends on the styles of beer you like to brew.
My stock of specialty malts is rather jumbled, but I like complex malt bill recipes:

Black
CaraMunich II
Caraaroma
Carafa Special T2
Carahell
Carared
Chocolate
Chocolate Wheat
Crystal Medium
Crystal Dark
Munich 2
Vienna

Thanks guys.... so Im guessing the same for any of the grains etc Munich 1, 2, 3?

Im not up to developing my own recipes yet but would like to so I have a bit to learn!
