Too Sweet Out Of Secondary

Hi all,

I've just tasted my first AG batch (an apa) out of secondary and noticed that it is way to sweet (as in almost undrinkable). This is very strange cos the FG was about 1007 and I was expecting it to be quite a dry beer.

The recipe was as follows:

4.5 kg Pale Malt
0.3 kg Crystal
Mashed at 63-65C for 60 mins

25g Cascade hops at 60, 20 and 5 mins during boil

US-05 Safale yeast

OG 1050
FG 1007

Volume 18 L

Not sure why it's so sweet? Also will it change much with bottling?

Cascade hops have a citrusy but sweet aroma. Looking at the FG it seems likely there is not much sugar left and you're in fact getting "sweet" aromatics from it?

Hadn't thought of that one. Thanks mate. Will it change over time and if the beer is chilled?
 
don't forget that carbonation gives a beer a perception of dryness on the tongue as well.

...and carbonation also increases the acidity level, which helps to balance any perceived sweetness before bottling.

1.007 FG sounds quite dry, and the OG of 1.050 implies about 6% ABV. That might also be contributing to the perceived sweetness.

Hope it comes good for you after a couple of weeks in the bottle.
