This is one of those 50/50 things

bit dissapointed in my stoutt i didnt think it would be so bitter ( never tried stout before
its like omg bitter, but the smell is absoultely beautiful, caramelly, malty and a hint of liqorice, but yeah a bit dissapointed about the bitterness anything i can do to combat thAt?


but on the good note the coopers cerveza although still greeen is yum, right colour, and goes down like water i might keep on going with the cerveza


I have another brew in primary , Toohey's real ale, 500gm light malt, 1kg of Coopers brew enhancer 1 and 12g of fuggles

I only ever really tried lager style beers , this ale smeels great but will it be as bitter as the stout
 
The stout will probably be good in time. Was it bitterness or roastiness? That will fade with time. Your tastes may change as well. ;)

The ale won't taste like the stout. Don't worry. :super:

How long since they were brewed?
 
Gonzo it will be the mother's milk and not as bitter as the stout.

Try another stout with 1.5 kg of liquid malt, safale yeast and a pinch of fuggles.
 
the ale is smelling great, its amazing what using malts and dextrose and added hops does to a kit it really enhances the brew, nice and caramel tastes. However i think its got this bug thats going around thats sticking brews @ 1020 the samples taken for the hydrometer are really realy carbonated so im just going to wait it out for a while.


The stout is caramel/coffee then BITTER they have been bottled for nearly 2 weeks as i said still way too green but the hopes are up

Gonzo, How's your temperature? Don't rule out rousing (lightly shaking the fermenter)

I've got a demon Newcastle Brown Ale, just won't quit bubbling, clicking over into the fourth week. My thinking on this one is "if ain't broke don't fix it."

im using a heat belt because at the moment still a bit cold 10 @ night and mabe 15 -16 in the day so im probly guestimating that its at around 20 - 24 degrees
 
Gonzo purchase a stick on thermometer they are pretty cheap and very handy.

The gravity on mine started at 1.042 and it was down to 1.018 after 2 weeks and still bubbling so I left it. I have had it happen in the past and the brew was still good.
 
i dont know how much this effects it but i was adding a little bit too much water too my fermenter because there is no marker for 23L so i dropped it back a bit so i recon that its t 22L how much will this effect it.

There doesnt seem to be much activity in the fermenter still lots of carb when i fill up the test tube for hydrometer

Brewing to a smaller volume enhances the flavour, mouthfeel and increases the alc content slightly (Higher SG)

I brew all of my beers to 20 litres, as this exactly fills a keg, once losses for primary-CC cube transfer is allowed for. That way, I don't have to have a few clean sterile bottles on hand for extra beer.
