Ok i love Folk music. It's out there.

Anyway i had this crazy idea last night about loosly designing recipes around music eg song titles artists etc.

I thought i'd start with this as it gives a general idea of where my mind is at and i'm a huge Ralph McTell fan and this is his most well known song. And its got London in the title which suits my needs.

I've based this on trying to use up whats on hand but will buy grain if needed.

I did't just want to copy a recipe either.

Looking for feedback on whether this will fit the bill.

Final Gravity (FG): 1.011 (°P): 2.8
Alcohol (ABV): 4.13 %
Colour (SRM): 21.5 (EBC): 42.4
Bitterness (IBU): 19.2 (Tinseth - No Chill Adjusted)

80% Maris Otter Malt
8% Caraamber
8% Caraaroma

0.8 g/L Fuggles (5.7% Alpha) @ 45 Minutes (Boil)

Single step Infusion at 68°C for 90 Minutes. Boil for 90 Minutes

Fermented at 18°C with WLP013 - London Ale

If the hop/malt balance you've got in mind for the finished beer requires finishing gravity to be 1011(as indicated in your recipe) the beer may not come out as intended. With 20% specialties and a single infusion at 68c you may struggle to get it to finish that low.

Whether you want to alter mash schedule, hopping(IBUs) or cara/crystal malt content will depend on the characteristics and balance you want in the final beer.
 
Thats just what brewmate calculated, i wouldn't have expected it to finish that low either.
I guess i am interested in if the cara malts will get me the caramel toffee flavours expected of this style.
Was also planning on pulling some mash liquid and doing a reduction boil separately.
