Hi beer lovers, have a few AG brews under my belt now and this evening I sampled a Mad brewers Orchard Ale Siason, made by Malt Shovel. Now I must say I realy enjoyed it and it peaked my interest in this style of beer. Having done some googling, which I believe is customary these days, there are a few differences to your normal ale. Ferment temps, local herbs and spices, etc. I have a few ideas I'd like to try but am after info on doing a sour mash.

You all knew that I'd take this bait, didn't you?

Here's my previous sour mash
thread

And a link to what Basic Brewing have to say about sour mashing.

Hope this helps. There is heaps more available via the AHB advanced search function.
